directions
1. Combine all ingredients except the cornstarch and water and mix well. Reserve half of the sauce as marinade for the chicken.
2. Pat chicken dry with a paper towel and season all sides with salt and pepper. Pour the marinade over the chicken and completely coat. Marinate for an hour at least before cooking.
3. Combine the remaining sauce with the water and corn starch. Place in a small sauce pan and simmer for about 1 minute until the sauce thickens. This is your BBQ sauce.
4. Cook marinated chicken over a low temperature grill with the lid down until the meat is fully cooked. Turn chicken frequently to avoid burning. This will take between 15 and 25 minutes depending upon the thickness of the pieces.Alternatively, you can roast the chicken in an over set at 325 degrees until the meat is fully cooked. Then coat with BBQ sauce and move the chicken to the grill.
5. Brush the chicken liberally with the BBQ sauce and turn up the heat. Allow a little bit of char to build up on the chicken if you like it that wayRemove chicken, brush one more time with the BBQ sauce and serve immediately.
