Lemon-Garlic Zoodles with Shrimp
Treat yourself to a little shrimp with this dish that is simple to make and delicious. Bring the heat up or down to your personal preference by adjusting the crushed red pepper.
1 1/2 t. olive oil
1/8 t. crushed red pepper
4 oz, shrimp, peeled and deveined
2 cloves garlic, minced and divided
1 med. zucchini, spiralized
1/2 c. grape tomatoes, halved
1/2 lemon

1. Heat a large skillet over medium-high heat. Add 1 teaspoon of oil and crushed red pepper. Add the shrimp; cook 2 to 3 minutes. Add half of the garlic and continue cooking until the shrimp is cooked through. Set aside.
2. Add the remaining oil and garlic to the pan, and add zucchini noodles. Cook until just softened.
3. Add the shrimp and tomatoes to the pan and squeeze the lemon over the dish. Remove from heat and serve.
