Mashed Sweet Potatoes
2 medium sweet potato, peeled and sliced thin
2 tablespoon orange juice
1/2 teaspoon multani garam marsala (or a dash each: cumin, paprika, cinnamon, cayenne, cloves)
1 tablespoon extra virgin olive oil
1/4 teaspoon salt
1 dash ground black pepper

  • Cook Time:10 minutes
1. Bring lightly salted water to a boil in saucepan with vegetable steamer and tight fitting lid.
2. Steam peeled and sliced sweet potatoes (covered) until tender (about 10 minutes).
3. When tender, mash with a potato masher and add rest of ingredients.
