Meatless Kofta Pita Sandwiches
To make this recipe without a grill, skip the skewers and cook the koftas in a large nonstick skillet with a bit of vegetable oil, working in batches if needed.
1 (12-oz.) block plant-based ground meat
1 yellow onion, finely chopped
1 cup fresh parsley leaves, chopped
2 tsp. ground coriander
1 tsp. ground cumin
1 tsp. salt
1/2 tsp. pepper
6 mini pita breads
Green leaf lettuce, for serving
Pitted and sliced kalamata olives, for serving

Meatless Kofta Pita Sandwiches

1. Soak six wooden skewers in water for 20 minutes. Heat grill to high for at least 10 minutes, then clean and oil grates.
2. Place plant-based ground meat in a large bowl and break into small pieces using a fork. Mix in onion, parsley, coriander, cumin, salt, and pepper until well combined, then divide into six portions. Working with one portion and skewer at a time, form mixture around skewer into a flat, 5"-long oval.
3. Transfer to grill and cook until koftas are well-browned and crisp, 8 to 10 minutes, gently flipping once. Carefully remove koftas from skewers, then layer onto pitas with lettuce, olives, feta, and tzatziki.
