Peruvian Stir-Fried Beef with French Fries (Lomo Saltado)
Ingredients
Celebrate Hispanic Heritage Month with this classic Peruvian stir-fry. Flavorful sirloin steak comes together with quick and easy frozen french fries and pre-cooked rice for a satisfying meal.
1/2 (32-oz.) bag frozen french fries
1 medium red onion
3 plum tomatoes
1 lb. sirloin steak
2 Tbsp. canola oil, divided
2 cloves garlic, minced
1 jalapeno, thinly sliced (optional)
1 Tbsp. reduced-sodium soy sauce
1 Tbsp. lime juice
2 Tbsp. chopped cilantro
2 (8.8-oz.) packages Nature's Promise 90 Seconds Long Grain White Rice

Peruvian Stir-Fried Beef with French Fries (Lomo Saltado)

directions
Preheat oven to 425 degrees F. To a baking sheet, add french fries, and cook 10 to 12 minutes, or according to package directions. Meanwhile, thinly slice onion. Core tomatoes and cut into wedges. Thinly slice steak into 1" strips.
In a 12" skillet, heat 1 tablespoon oil over high. Add steak strips and season with salt and pepper. Cook until browned, 5 to 6 minutes, stirring occasionally. Transfer to a plate.
To skillet, add remaining 1 tablespoon oil and heat over medium-high. Add onion and cook until softened, 5 to 6 minutes. Reduce heat to medium. Stir in tomatoes, garlic and jalapeno, if using. Cook until tomatoes have released some juices, 2 to 3 minutes, stirring constantly. Season mixture with salt and pepper.
To skillet, stir in soy sauce and lime juice. Return steak to skillet. Add cilantro and cooked fries. Cook rice according to package directions and serve on the side with stir-fry.
