Ingredients
This festive cocktail has all the goodness of pumpkin spice and an espresso martini in one ready-for-happy-hour package.
1/2 cup brown sugar
1/2 cup canned pumpkin puree
1 tsp. vanilla extract
1 tsp. pumpkin pie spice
3 Tbsp. vodka
1/4 cup unsweetened cold brew concentrate or cooled espresso
2 Tbsp. Bailey's Irish Cream
Coffee beans, to garnish (optional)

directions
To make the pumpkin spice simple syrup: To a small saucepan on medium heat, add 1/2 cup water, brown sugar, pumpkin puree, vanilla and pumpkin pie spice. Cook 5 minutes, until sugar dissolves, stirring occasionally. Remove from heat and let steep at least 15 minutes. Pour simple syrup into a resealable jar and let cool to room temperature. Refrigerate for up to 10 days.
To make the cocktail: Add the vodka, cold brew or cooled espresso, Irish cream and 1/4 cup pumpkin spice simple syrup to a cocktail shaker. Fill shaker with ice and shake 30 seconds-1 minute. Strain into 2 martini glasses and, if desired, garnish with the coffee beans.
