Red Lentil Dhal
Dip your toes into the water of traditional Indian cuisine with this easy dhal. Serve hot over brown rice or quinoa, or serve with whole-grain naan.
2 1/2 c. red lentils
5-6 c. water
2 T. curry paste
1/2 c. lite coconut milk
1/3 c. water
2 t. salt
1/4 t. black pepper
1/4 t. cayenne
2 t. curry powder
1/2 t. turmeric
1 t. chili powder
2 T. sugar
Lime juice to taste
