1. In large frying pan with high sides, saute garlic in oil over medium heat about 1 minute.
2. Add Spinach, salt, pepper and crushed red pepper and cover. (If you are using Kale, rinse it in cool water and tear the leaves from the stems. Discard the stems. Then add to pan).
3. Add a tablespoon of water, if necessary. Cook until bright green and wilted.
