Shrimp Skewers with Peanut Dipping Sauce
Ingredients
vegetable cooking spray
1 lb. frozen extra-large uncooked shrimp, peeled and deveined, about 32 shrimp, thawed
1/8 tsp. salt
1/4 tsp. freshly ground black pepper
1/4 tsp. paprika (optional)
1/2 cup all-natural smooth salted peanut butter
1 Tbsp. honey
1 Tbsp. unseasoned rice vinegar
2/3 cup unsweetened coconut milk beverage
1 Tbsp. toasted sesame oil
11/2 tsp. reduced-sodium soy sauce, or to taste
3/4 tsp. minced jarred ginger, or to taste
1/2 tsp. minced garlic, or to taste
1/8 tsp. cayenne, or to taste (optional)
baby spinach for garnish (optional)

Shrimp Skewers with Peanut Dipping Sauce

Shrimp Skewers with Peanut Dipping Sauce

directions
1. Preheat oven to 400 degrees F. If using wooden skewers, soak 8 skewers in cold water for 10 minutes.
2. Line a baking sheet with foil and spray with cooking spray. When skewers have finished soaking, thread 4 shrimp onto each skewer, placing the skewer through each shrimp in two places, almost turning the shrimp into a C shape. Place skewers on baking sheet, and season with salt, pepper, and paprika if using. Cook until shrimp are pink and fully cooked, about 7 minutes.
3. While shrimp cook, in a food processor combine peanut butter, honey, vinegar, coconut milk, sesame oil, soy sauce, ginger, garlic, and cayenne if using. Puree until mixture is smooth, 30 seconds to 1 minute. Taste and add additional seasoning if desired. Alternatively, combine ingredients in a bowl and use an immersion blender to blend.
4. Arrange spinach if using on a platter. Place shrimp skewers atop spinach and serve peanut sauce in a bowl on the side.
