1. Center a rack in oven and heat to 375 degrees.
2. Pat chicken dry and season with salt and pepper. Heat oil in a large oven-safe skillet over medium until shimmering. Add chicken and cook until golden brown, 3 to 5 minutes per side. Remove skillet from heat.
3. Pour sauce over chicken, then top evenly with cheese, pepperoni, and olives. Bake until cheese is bubbling and thickest part of chicken breasts registers 165 degrees, about 15 minutes.
4. Let sit 5 minutes, then sprinkle with basil and serve.
