Skillet Turkey Meatballs and Spinach Rice
Ingredients
1 3/4 cups water, divided
2 cups Hannaford Long Grain Instant White Rice
3 cups Hannaford Baby Spinach, coarsely chopped
1 Tbsp. extra-virgin olive oil
Salt and pepper
1 (14-oz.) bag Nature's Promise Turkey Meatballs
1 cup halved grape tomatoes
1 1/2 cups chopped English cucumber
2 Tbsp. Taste of Inspirations Greek Dressing
1/4 cup Taste of Inspirations Reduced Fat Crumbled Feta Cheese

Skillet Turkey Meatballs and Spinach Rice

Skillet Turkey Meatballs and Spinach Rice

directions
1. Bring 1 1/2 cups water to a boil in a large nonstick skillet. Stir in rice, then cover and remove from heat. Let sit until rice is tender and water is absorbed, about 5 minutes.
2. Stir spinach, oil, and remaining 1/4 cup water into rice in skillet; season with salt and pepper to taste. Top with frozen meatballs, cover, and cook over medium-low until meatballs are hot throughout, about 15 minutes.
3. In a medium bowl, toss tomatoes and cucumber with dressing and season with salt and pepper to taste. Divide meatballs and rice among plates and sprinkle with feta. Serve with tomato-cucumber salad.
