Southwestern Chicken Pizza with Chipotle Ranch Chopped Salad
Ingredients
1 lb. chicken breast sliced into cutlets, 1/4 inch thick, then cut into 1-inch-long pieces (Pizza)
1/4 tsp. freshly ground black pepper (Pizza)
1/3 cup Taste of Inspirations Honey Chipotle Grill Sauce (Pizza)
1 (10-oz.) prepared, thin, whole wheat pizza crust (Pizza)
1/2 cup frozen corn, thawed (Pizza)
1/2 cup canned black beans, rinsed and drained (Pizza)
1 cup shredded Cheddar cheese made from 2 percent milk (Pizza)
2 scallions, trimmed and sliced (Pizza)
1/3 cup Chipotle Ranch Dressing (Salad)
1/4 cup reduced-fat sour cream (Salad)
1 cucumber, peeled, seeded, and chopped (Salad)
1 yellow bell pepper, chopped (Salad)
1/3 cup finely chopped red onion (Salad)
1 pint cherry tomatoes, halved (Salad)
2 heads romaine hearts, washed and chopped (about 8 cups) (Salad)

Southwestern Chicken Pizza with Chipotle Ranch Chopped Salad

directions
1. Preheat oven to 400 degrees F. Grease a large nonstick skillet with cooking spray and heat over medium heat. When hot, add chicken pieces and black pepper. Cook and stir until chicken is cooked through, about 5 to 7 minutes. Add grilling sauce to chicken and stir to coat thoroughly.
2. Place chicken onto pizza crust. Sprinkle corn and black beans over chicken, followed by cheese. Bake for 10 to 12 minutes, until crust is lightly browned at edges and cheese is melted and bubbling.
3. While pizza is baking, prepare salad. Mix Chipotle Ranch Dressing and sour cream in a small bowl; stir until smooth. In a large bowl, combine cucumber, bell pepper, onion, tomatoes, and romaine hearts. Add dressing and toss thoroughly.
4. When pizza is done, remove it from oven and sprinkle with scallions. Cut pizza into 8 wedges and serve with salad.
