1. Pat steaks dry with paper towels.
2. In a small bowl, mix together salt, white and black peppers, and chipotle, onion, and garlic powders. Sprinkle rub on each side of both steaks and massage spices into the meat. Let the rubbed meat sit at room temperature for 1 hour. If desired, let rest overnight, refrigerated; remove from the fridge 1 hour before cooking.
3. Preheat grill to medium heat. Brush grill grate with oil and place steak directly on grill grate. Cook for 4 to 6 minutes, turn, and cook for another 2 to 4 minutes for medium rare to medium doneness.
4. Transfer meat to a cutting board and let rest for 5 minutes. Slice steaks against the grain into 1/2-inch slices and serve.
