Stir-Fried Zucchini
When everyone and their brother is trying to unload a garden's worth of zucchini on your doorstep when you're not home, try this recipe. That mountain of zucchini won't seem so daunting then. If only they'd leave the onions and the ginger too...Tip: If you like a little heat, try adding a few red pepper flakes or a little chili paste with the sesame seeds at the end.
1 Tbsp. canola oil
1 lb. zucchini, sliced
1 onion, cut into wedges
1/2 tsp. grated ginger
1 Tbsp. sesame seeds
1 Tbsp. lite soy sauce
1 1/2 tsp. dark-roasted sesame oil

1. Heat the canola oil in a large skillet over medium heat.
2. Add the zucchini, onion, and ginger. Stir-fry until zucchini is tender (5-8 minutes).
3. Sprinkle with sesame seeds, soy sauce, and sesame oil. Toss to blend.
