Turkey Fajitas with Cranberry, Apple, and Jalapeno Salsa
Ingredients
1 pickling cucumber, chopped into 1/4-inch dice (Salsa)
1/4 cup coarsely chopped fresh or frozen (thawed) cranberries (Salsa)
1 Granny Smith apple, peeled and chopped into 1/4-inch chunks (Salsa)
1/2 tsp finely minced jalapeno chili pepper, or to taste (Salsa)
2 Tbsp. finely chopped cilantro (Salsa)
2 Tbsp. finely chopped red onion (Salsa)
1/4 cup chopped dried cranberries (optional) (Salsa)
1 Tbsp. olive oil (Salsa)
2 Tbsp. fresh lime juice (Salsa)
2 tsp. cornstarch (Fajita Seasoning Mix)
11/4 tsp. paprika (Fajita Seasoning Mix)
1/4 tsp. onion powder (Fajita Seasoning Mix)
1/4 tsp. garlic powder (Fajita Seasoning Mix)
1/2 tsp. ground cumin (Fajita Seasoning Mix)
1/2 tsp. dried oregano (Fajita Seasoning Mix)
1/2 tsp. unsweetened cocoa powder (Fajita Seasoning Mix)
1/2 tsp. freshly ground black pepper (Fajita Seasoning Mix)
1/4 tsp. salt (Fajita Seasoning Mix)
pinch of cayenne (Fajita Seasoning Mix)
2 tsp. vegetable oil (Fajitas)
1/2 cup sliced red onions (Fajitas)
1 small red bell pepper, seeded and finely sliced (Fajitas)
11/2 cups cooked turkey, cut into thin strips 2 to 3 inches long (Fajitas)
1/2 cup canned black beans, rinsed and drained (Fajitas)
1/2 to 3/4 cup low-sodium chicken broth or turkey broth (Fajitas)
4 (6 inch) multigrain flour tortillas (Fajitas)

Turkey Fajitas with Cranberry, Apple, and Jalapeno Salsa

Turkey Fajitas with Cranberry, Apple, and Jalapeno Salsa

directions
1. Prepare the salsa. Combine all salsa ingredients in a medium bowl and set aside.
2. Prepare the seasoning mix. Combine all ingredients in a small bowl and mix well.
3. Prepare the fajitas. In a large skillet, heat oil over medium heat. Add onions and sautee until lightly golden. Add red and green peppers and sautee until all vegetables are tender.
4. Add turkey, beans, seasoning mix, and 1/2 cup of the broth. Stir to create a sauce and cook for 2 minutes until mixture thickens. Add additional 1/4 cup broth if needed to thin the sauce.
5. Warm tortillas for 30 seconds in microwave. Divide fajita mixture among tortillas, then top with salsa or serve on the side, along with your choice of optional accompaniments.
