Wild Rice with Dried Fruit & Walnuts
Enjoy your whole grains to the fullest with this elegant rice pilaf-style side. Pairs beautifully with oven-roasted chicken breast or pork tenderloin. 1/2 cup wild rice
1 Tbsp. olive oil
1/4 onion
1/2 carrot, peeled
1/2 stalk celery
2 t. finely chopped scallions
1 apple, peeled and diced
1 1/2 Tbsp. raisins
1 tsp. chopped fresh parsley
1 tsp. red wine vinegar
2 tsp. finely chopped shallots
Pepper, to taste
1 1/2 Tbsp. chopped walnuts, toasted

1. Cook rice according to package directions.
2. While rice cooks, heat oil in a small pan over medium heat. Cook onion, carrot, and celery until tender (6-8 minutes). Set aside.
3. When rice is done, fluff with a fork and gently stir in all ingredients.
