Using the coarse side of a box grater, grate apples down to cores. Discard cores. Line a colander with a tea towel or cheesecloth and set inside a large bowl. Transfer grated apples to colander. Gather ends of towel and squeeze liquid from apples. (You should have about 3 cups grated apples.)
In a medium bowl, lightly beat eggs, cornstarch and 2 tablespoons cinnamon sugar until combined. Add grated apples and stir to coat. Shape apple mixture into 1" tots (1 tablespoon each).
Preheat air fryer to 400 degrees F. Coat rack with cooking spray. Working in batches if needed, arrange apple tots on rack in air fryer, spacing evenly. Cook 4 to 6 minutes, flipping tots halfway through.
Add remaining 2 tablespoons cinnamon sugar to a shallow bowl. Toss warm apple tots in cinnamon sugar. Serve immediately.
Tip: Toss with more cinnamon sugar, if desired, and serve with vanilla yogurt as a dipping sauce.
