Beefsteak Tomato Crab Melts with Cucumber-Shallot Salad
Ingredients
1 English cucumber, thinly sliced into rounds (salad)
1 small shallot, thinly sliced (salad)
2 Tbsp. rice vinegar (salad)
1/4 tsp. kosher salt (salad)
1/8 tsp. sugar (salad)
1/8 tsp. freshly ground black pepper (salad)
pinch of cayenne pepper (salad)
4 slices Taste of Inspirations 12 Grain Bread, toasted (crab melts)
1 lb. crabmeat, fresh if available (crab melts)
2 Tbsp. reduced-fat mayonnaise (crab melts)
1 Tbsp. fresh dill or 1 tsp. dried (crab melts)
1 Tbsp. prepared horseradish (crab melts)
1/8 tsp. salt, or to taste (crab melts)
1/8 tsp. freshly ground black pepper (crab melts)
1 beefsteak tomato, halved through the core and cut into 1/4-inch-thick slices (crab melts)
4 slices Jarlsberg Lite cheese (crab melts)

Beefsteak Tomato Crab Melts with Cucumber-Shallot Salad

Beefsteak Tomato Crab Melts with Cucumber-Shallot Salad

directions
1. Prepare cucumber salad. In a medium bowl, combine all cucumber salad ingredients until evenly mixed. Refrigerate until needed.
2. Prepare crab melts. Toast bread slices. While they toast, in a medium bowl, mix together crabmeat, mayonnaise, dill, horseradish, salt, and pepper.
3. Preheat broiler. Place toasted bread slices on a baking sheet and top with tomato slices. Divide crabmeat among the four sandwiches, making an even layer of crabmeat over tomatoes. Place a slice of cheese over the crab on each sandwich.
4. Broil sandwiches until cheese is melted, about 3 minutes. Transfer to 4 plates and serve with cucumber salad on the side.
