1. Preheat oven to 325 degrees F. Spray a 9-inch deep-dish pie pan with cooking spray.
2. In a large mixing bowl, beat eggs until fluffy. Add salt, pepper, flour, and milk and whisk together. Add cottage cheese, Monterey Jack, goat cheese, shallot, and sun-dried tomatoes and mix well.
3. Pour into prepared pan and cover with foil. Bake at 325 degrees F for 1 hour or until top is golden brown. Let pie rest for 5 minutes before serving. Serve warm.
