1. Beat eggs and place in a shallow dish. Mix crumbs with Italian seasoning, salt and pepper and place in a separate shallow dish.
2. Pound chicken between wax paper until 1/4 inch thickness. Dip chicken in egg then coat with crumb mixture.
3. Heat oil in skillet to medium-high heat. Brown both sides of chicken, about 3 -4 minutes each side, depending on thickness. (Or bake in oven at 350 degrees until cooked through).
