Ingredients

1/4 cup Apple butter
1/4 cup Vegetable oil
1 each Large egg
2 teaspoon Vanilla extract
1 1/4 cup All purpose flour
3/4 cup Equal
1 teaspoon Baking Soda
1 teaspoon Cinnamon, ground
1/4 teaspoon Salt
8 oz Carrots, shredded
1/4 cup Raisins, seedless
1/4 cup Crushed pineapple, well drained

directions
1. Combine apple butter, oil, egg and vanilla on medium speed of mixer until well blended. Stir in combined flour, Equal Sugar Lite, baking soda, cinnamon and salt until combined. Fold in carrots, raisins and pineapple just until blended.
2. Spread batter into an 8-inch square baking pan well sprayed with non-stick cooking spray. Bake in preheated 350 degrees F oven 30 to 35 minutes or until wooden pick inserted near center comes out clean. Cool completely on wire rack.
