Chicken Cacciatore
This classic Italian dish is full of vegetable goodness, especially when you choose a sauce that is low in sugar and salt. Serve your portions up with either whole-grain pasta or bread for a meal that is complete, delicious and easy to make.
4 skinless chicken breasts
2 Tbsp. olive oil
1/2 lb. mushrooms, halved
1 bell pepper, sliced
1 onion, chopped

1. Preheat oven to 350 degrees F. Place chicken in baking pan.
2. Heat oil in a large skillet over medium-high heat. Saute the vegetables until soft and brown (7-8 minutes).
3. Arrange vegetables around chicken and cover with sauce. Bake until chicken reaches a minimum internal temperature of 165 degrees F (25-30 minutes).
