Chicken Fried Rice
Fried rice is a delightful dish, and it's easier to make at home than you might realize. The trick to success is to start with cold rice, making this a perfect dish for repurposing rice leftover from last night's meal.
1 tsp. vegetable oil
1 cup sliced green onion
2 cups sliced mushrooms
1/2 cup egg substitute
2 cooked chicken breasts, diced
2 Tbsp. light soy sauce
1 Tbsp. sesame oil
Garlic powder to taste
Red pepper flakes to taste
4 cups cooked brown rice

1. Heat oil in nonstick skillet over medium-high heat until hot. Saute green onions and mushrooms until mushrooms are soft (4-5 minutes).
2. Add the eggs and scramble (2-3 minutes).
3. Add remaining ingredients and just enough water to prevent sticking. Stir until heated through and slightly crispy (5-8 minutes).
