Cranberry Chimichurri
Serve this bright, tart relish with roast beef, pork, or turkey.
2 cups fresh parsley leaves (from 1 large bunch)
1 cup fresh whole cranberries
1 Tbsp. chopped fresh rosemary
2 garlic cloves, minced
1/2 cup extra-virgin olive oil
3 Tbsp. red wine vinegar
1 tsp. honey
Salt and pepper

1. Combine parsley, cranberries, rosemary, and garlic in a food processor and pulse until coarsely chopped.
2. Transfer to a bowl and whisk in oil, vinegar, and honey; season with salt and pepper to taste.
