1. Place oven rack in lowest position and preheat the oven to 500 degrees F.
2. Wash and thoroughly dry kale - a salad spinner is great for this. Spread kale out in one layer on a baking sheet, drizzle with oil, and toss to coat. You may have to bake the kale in batches. Bake kale until crisp, watching carefully and turning the leaves frequently with long tongs and an oven mitt, about 2 to 3 minutes. Salt to taste as soon as you take the kale out of the oven.
