1. Place a rack in lowest part of oven and heat to 400 degrees.
2. Combine mushrooms, thyme, and oil on a baking sheet and toss to coat; season with pepper and spread into an even layer. Roast until mushrooms are sizzling and beginning to brown, 15 to 20 minutes.
3. Remove from oven and use a thin metal spatula to flip mushrooms, then add garlic and season lightly with salt. Toss to combine, then return to oven and roast, stirring once, until mushrooms are crispy and well browned, 5 to 10 more minutes.
4. Immediately add vinegar and toss gently to coat, then season with salt and pepper to taste. Remove thyme sprigs before serving.
