Fruited Rice Pilaf
Whoever thought of putting rice and fruit together is a genius. This dish is a delicious accompaniment to a whole range of meals.
2 tsp. olive oil
1 1/2 cups brown rice
1 clove garlic, minced
3 cups water
1/4 tsp. salt
1/4 tsp. pepper
1/4 cup diced onion
1/4 cup sliced green onions
1 cup raisins
1 cup chopped dried apricots
1/4 cup slivered almonds, chopped

1. Heat oil in large saucepan over medium heat until hot. Saute rice and garlic until fragrant (1-2 minutes).
2. Stir in water, salt, and pepper. Cover, bring to a boil. Reduce heat and simmer for 20 minutes.
3. Stir in remaining ingredients. Cook until liquid is absorbed and rice is tender (20-25 minutes).
