Grapefruit Salad
If color is something you crave on your table, don't pass this salad by. No matter the season, the pink and green and yellow will evoke springtime. Served chilled, this salad is simply refreshing. 1 red grapefruit
1/2 c. edamame, cooked and chilled
1/2 c. corn

1. Peel, seed, and cube grapefruit.
2. Peel and cube avocado.
3. Add the corn and edamame to the grapefruit and avocado and gently toss. Serve chilled.
