Grilled Caribbean Chicken Breasts
This Caribbean-influenced chicken will inspire your tastebuds and leave you imagining ocean breezes. Add a mix of your favorite veggies to the broiler pan and serve with a side of whole grains to round out the meal.
1/4 cup orange juice
1 tsp. orange zest
1 Tbsp. olive oil
1 Tbsp. lime juice
1 tsp. minced fresh ginger
2 garlic cloves, minced
1/4 tsp. hot sauce
1/2 tsp. oregano
1 1/2 lbs. boneless, skinless chicken breasts, halved

1. In a blender, combine all ingredients except the chicken. Place the chicken in a freezer bag and with the marinade. Marinate in the refrigerator (2-24 hours).
2. Remove chicken from bag and discard marinade. Place the oven rack at the highest position. Broil the chicken on high until it reaches a minimum internal temperature of 165 degrees F, turning once (6 minutes per side).
