1. Preheat oven to 200 degrees F. Place a baking sheet in the oven. Heat a large nonstick griddle or nonstick skillet over medium heat.
2. Whisk together flour, baking powder, baking soda, sugar, and salt in a large bowl. Add butter, egg, and buttermilk and whisk until just smooth.
3. Lightly spray griddle with cooking spray. Using a measuring cup, scoop 1/3 cup batter onto cooking surface and use the back of the measuring cup to spread batter to a thickness of about 1/3 inch. Cook until bubbles form around outside and middle of pancake, about 11/2 to 2 minutes. Turn pancakes and cook second side until golden, about 1 to 2 minutes. Transfer to prepared baking sheet to keep warm until ready to serve. Continue with remaining batter. Serve with butter, blueberries, and maple syrup, if desired.
