1. Place water in a small bowl and sprinkle with yeast; stir to combine. Let sit 1 to 3 minutes for the yeast to proof - it should foam up a little. Transfer to a large bowl and whisk in oil, egg, honey, sugar, and milk and stir to mix well. Stir in flour and salt, then pecans. Cover with plastic wrap and refrigerate for 8 hours or overnight.
2. The next morning, heat a waffle iron, spray with vegetable cooking spray, and cook according to the manufacturer's instructions.
3. Keep waffles warm in a 200 degrees F oven while you prepare the entire batch. If desired, serve with whipped butter, honey, and additional pecans.
