1. Preheat grill to medium-high heat. Spray grill lightly with vegetable cooking spray.
2. In a medium saucepan, combine tomato sauce, coffee, brown sugar, cinnamon, Worcestershire, and hot pepper sauce. Cook over medium heat, stirring constantly, until sugar dissolves. Set aside half the sauce and use the other half when grilling.
3. Pound chicken to 1/2-inch thickness. Place on grill and brush with sauce. Grill chicken on one side for 4 minutes, brush with more sauce, and grill 1 more minute. Turn chicken and brush second side with sauce. Continue cooking until thoroughly cooked and juices run clear, about 5 more minutes, brushing with more sauce after 3 minutes if desired.
4. Remove from grill and serve with additional sauce in a small bowl on the side.
