1. Place tofu between a double layer of paper towels and press firmly to absorb any excess liquid. Whisk water, maple syrup, and soy sauce in a small bowl and set aside.
2. Heat oil in a large nonstick skillet over medium heat until shimmering. Add tofu and cook, flipping occasionally, until golden brown and crispy all over, about 10 minutes.
3. Add maple syrup mixture to skillet and cook, stirring occasionally, until it begins to reduce into a glaze, about 5 minutes. Reduce heat to low and continue to cook until both sides of tofu are well-coated with sauce. Remove from heat, stir in scallions, and sprinkle with sesame seeds before serving.
