1. Preheat oven to 325 degrees F. Grease a 1 quart casserole dish or 8 x 8 inch pan with cooking spray; set aside. Cut bread slices into 1/2 inch cubes; set aside.
2. In large mixing bowl, whisk together milk, maple syrup, liquid egg whites, and vanilla extract. Add bread cubes to bowl. Using a wooden spoon, stir mixture to coat bread cubes thoroughly. Stir in raisins. Transfer mixture to prepared casserole dish.
3. Bake for 30 to 35 minutes, or until lightly browned on top. Let pudding cool at least 10 minutes before serving. If desired, garnish each portion with a scoop of frozen yogurt (coffee is nice) and a drizzle of additional maple syrup.
