2 cups mashed potatoes
3/4 cup shredded cheddar cheese
3 large eggs
1/3 cup diced ham
4 scallions, sliced thin, plus more for serving
1/2 tsp. salt
1/2 tsp. pepper

Mashed Potato Cups

1. Heat oven to 400 degrees. In a medium bowl, mix together mashed potatoes, cheese, eggs, ham, scallions, salt, and pepper until combined.
2. Distribute mixture evenly in a greased 12-cup muffin tin and bake until sides are golden brown, 25 to 30 minutes. Serve warm, with a dollop of sour cream and more scallions.
