Mediterranean Cobb Salad
2 oz prosciutto, sliced into thin strips
3 tablespoons tahini (sesame paste)
3 tablespoons Fresh lemon juice
1 teaspoon minced garlic
1 tablespoon extra-virgin olive oil
1 tablespoon honey
1/4 teaspoon freshly ground black pepper
1 (5 oz.) pkg Nature's Place trademark Organic Baby spinach
2 cups diced cooked chicken breast
1 each red bell pepper, diced
1 each English Cucumber, chopped
3/4 cup Chickpeas, canned, drained and rinsed
2 each plum tomatoes, chopped
4 oz Goat cheese, crumbled
1/4 cup pitted kalamata olives, halved

Mediterranean Cobb Salad

1. Heat a nonstick skillet over medium-high heat and add prosciutto. Cook until crisp and browned, about 4 minutes. Remove from heat and set aside.
2. Prepare the dressing. In a medium bowl, whisk together tahini, lemon juice, garlic, oil, honey, and black pepper. Transfer to a small pitcher.
3. Spread spinach on a large platter. Arrange chicken, bell pepper, cucumber,chickpeas, and tomatoes in strips on top of the spinach.
4. Sprinkle goat cheese, olives, and prosciutto over everything.
5. Serve the salad with dressing on the side.
