1. Preheat oven to 350 degrees. Combine granulated sugar and cocoa powder in a shallow bowl. Stir together melted butter, brown sugar, salt, and ginger in a small bowl until combined; set aside.
2. Cut dough into 1" pieces, roll into balls, and coat in sugar-cocoa mixture.
3. Arrange one-third of the banana slices in a greased 12-cup Bundt pan, followed by one-third of the dough pieces, one-third of the brittle, and one-third of the butter mixture. Repeat with remaining bananas, dough, brittle, and butter mixture.
4. Bake until monkey bread is golden brown, 35 to 40 minutes. Let cool in pan 5 minutes, then run a paring knife along edges to loosen. Place a platter over top and invert. Top with more chopped brittle and serve warm.
