1. Heat oil in a large saucepan over medium-high until shimmering. Add mirepoix and Italian seasoning and cook, stirring occasionally, until onions are just softened, about 5 minutes.
2. Add all remaining ingredients except for feta, then cover and bring to a simmer. Reduce heat to low and simmer gently until soup is slightly thickened, about 10 minutes.
3. Season with salt and pepper to taste, then divide among bowls and sprinkle with feta before serving.
