Quick Pork and Vegetable Stew
1 tablespoon olive oil
1 lb pork tenderloin, cut into 1" cubes
2 med sweet potatos, peeled and cut into 1" cubes
1 Large onion, cut into 8 wedges
4 Garlic clove, minced
16 brussels sprouts, cut in half
16 Baby carrots
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon dried thyme
1/4 teaspoon salt
1 pinch ground black pepper
1 container reduced-sodium, fat-free chicken broth

Quick Pork and Vegetable Stew

  • Cook Time:25 minutes
1. Heat oil in Dutch oven to medium-high heat.
2. Brown pork on all sides, in 2 batches if necessary, (about 4 minutes each batch).
3. Add remaining ingredients, and bring to a boil. Reduce heat, cover and simmer, about 15 minutes, until vegetables are tender.
