Quinoa Tabbouleh
This delicious twist on traditional tabbouleh substitutes quinoa for bulgur and will round out any well-balanced meal. Mint is a classic herb for tabbouleh, but if it doesn't fit your taste preferences, parsley makes a solid substitute.
1 cup quinoa
1/2 cup coarsely chopped seeded tomato
1/2 cup chopped fresh mint
1/4 cup raisins
1/4 cup chopped cucumber
1/4 cup lemon juice
2 Tbsp. chopped green onions
1 Tbsp. olive oil
2 tsp. minced fresh onion
1/2 tsp. salt
1/4 tsp. pepper
