Rainbow Salad
1 red pepper, diced
3 carrots, peeled and diced
1 large cucumber, diced
1 small purple onion, diced
2 cups purple cabbage, chopped
2 Tbsp. rice vinegar (or white balsamic vinegar)
1/4 cup olive oil
1 Tbsp. honey
1 clove garlic, minced
1/2 tsp. salt
1 dash freshly ground black pepper

  • Servings:Serves 4 to 6
  • Prep Time:15 minutes
  • Cook Time:0 minutes
1. Combine first six ingredients in a bowl.
2. Combine the rest of the ingredients in a small bowl and whisk until well blended to make dressing. (Or shake well in a small clean jelly jar).
3. Pour dressing over salad, toss and serve.
