1 lb carrots, peeled, cut on diagonal into 2" pieces
2 tablespoon olive oil
1/4 teaspoon Kosher salt, coarse
1 dash cumin
1 dash chinese five spice powder (optional)

1. Preheat oven to 400 degrees.
2. Toss carrots with olive oil and spices.
3. Place carrots in a single layer in shallow pan. Roast for 15 - 20 minutes or until crisp-tender.
Alternative: Toss carrots with honey, dash of ground cloves, salt, pepper and a splash of rice wine vinegar.
