2 (15 oz.) cans chickpeas
3 Tbsp. olive oil
2 tsp. paprika
1/2 tsp. cumin
1/2 tsp. curry powder
3/4 tsp. salt
1 Tbsp. lemon zest
1 tsp. chopped fresh rosemary
1 tsp. chopped fresh thyme

1. Preheat oven to 425 degrees F.
2. Roast chickpeas until golden and crisp, stirring once (20 minutes).
3. While the chickpeas are roasting, combine remaining ingredients. Pour the mix over the pan of chickpeas and stir to coat. Return pan to oven to let flavors set (3-4 minutes).
4. Cool until safe to eat before serving (2-3 minutes).
