Summer Fruit Salad with Ginger-Strawberry Dressing
Ingredients
1 cup hulled strawberries (cut into 1/2 inch pieces)
1 tsp. sugar
grated zest and juice of 1 lime
2 Tbsp. water, or more, as needed
2 Tbsp. finely chopped crystallized ginger, or to taste
2 peaches, chopped into 1/2 inch pieces (about 2 cups)
1 pint blueberries
1 1/2 cups chopped mango (1/2 inch dice)
2 cups chopped seedless watermelon (1/2 inch dice)
8 mint sprigs (optional)

Summer Fruit Salad with Ginger-Strawberry Dressing

directions
1. In a food processor, combine strawberries, sugar, lime zest and juice, water, and crystallized ginger. Blend until pureed, about 30 seconds to 1 minute, adding 1 Tbsp. more water if too chunky. (Alternatively, combine ingredients in a deep bowl and puree using an immersion blender.) Distribute the strawberry sauce among 4 (1 pint) jars.
2. Evenly distribute fruit in layers in each jar in this order: peaches, blueberries, mango, watermelon. If desired, top with mint. Place a lid on each jar and store in the refrigerator for up to 2 days. To serve, instruct diners to gently shake the jar to distribute sauce and ingredients, then open.
