1. Stir together brown sugar, salt, chili powder, ground cumin, ground coriander, and cayenne pepper in a small bowl and set aside.
2. Spread pumpkin seeds on a foil-lined baking sheet and bake at 300 degrees, stirring occasionally, until dry, about 25 minutes.
3. Combine seeds, spices, and vegetable oil in a small nonstick skillet and cook over medium-low heat until sugar has dissolved and seeds are fully coated, about 5 minutes. Let cool completely before serving.
