1. Preheat a waffle iron.
2. Toss sweet potato noodles with cinnamon. In a large skillet, cook until softened (5-7 minutes).
3. Move to a bowl and toss with egg, vanilla and blueberries. Coat the waffle iron with cooking spray and pour the mix into the iron. Cook according to manufacturer's instructions.
4. Serve hot, topped with maple syrup, if desired.
