2 cup prepared brown rice, cooked according to package
1 large Fresh mango, diced
1 medium Red bell pepper, seeded, diced
1/2 cup dried coconut shaving
1/4 cup vidalia onion, minced
1 splash lime juice
1 tablespoon rice vinegar
1 pinch salt
1 dash ground black pepper

1. In a small bowl, mix together mango, peppers, coconut, onion, lime juice, vinegar, salt and pepper.
2. Stir mango and peppers mixture into rice and serve.
