White Bean and Broccolini Salad
Ingredients
2 tablespoon Extra virgin olive oil
1 1/2 teaspoon Hannaford Inspirations Dill Dijon Mustard
1 1/2 each Fresh garlic cloves
1 tablespoon Red wine vinegar
1 1/2 teaspoon Worcestershire sauce
1/2 teaspoon Capers
1/2 teaspoon Salt, Kosher
1/8 teaspoon Black pepper, ground
1/32 teaspoon Crushed red pepper
1/2 each Fresh broccolini bunch
15 1/2 oz Canned cannellini beans
1/2 each Fresh large sweet red bell peppers, 2 x 2"

White Bean and Broccolini Salad

White Bean and Broccolini Salad

directions
1. Put olive oil, mustard, mashed garlic, vinegar, Worcestershire sauce, drained capers, kosher salt, freshly ground pepper and crushed red pepper flakes, in a blender or food processor. Process until smooth, about 10 to 15 seconds on medium speed, making sure garlic is completely minced. Set aside.
2. Combine broccolini, cut into 1-inch long pieces; drained and rinsed cannellini beans; and seeded and chopped bell pepper in a large bowl and toss with the prepared dressing. Refrigerate until needed.
3. Before serving, give the salad a good stir.
