Zippy Chicken Rice Skillet
A traditional, easy meal that's hearty and filling, this easy skillet is a perfect meal to include in a meal prep plan to used up leftover rice and chicken from a previous dinner.Tip: If you don't have leftover brown rice on hand, sub in instant brown rice for a speedy cook time.
1 tsp. vegetable oil
1 cup chopped onion
1 clove garlic, minced
1 cup diced, cooked chicken breast
1 (15 oz.) can pinto beans, drained
2 cups cooked brown rice
1 tsp. rosemary
1/2 tsp. thyme
1/8 tsp. cayenne pepper
1 cup reduced-sodium chicken broth

1. Heat oil in large nonstick skillet over medium heat.
2. Add onion and garlic and saute until soft (4-5 minutes).
3. Add remaining ingredients, cover, and cook on low heat until liquid is evaporated (5 minutes). Serve hot.
