Citrus-Soy Vinaigrette
1 Tbsp. Dijon mustard
1 Tbsp. unseasoned rice vinegar
2 tsp. honey
1 1/2 tsp. citrus zest and 1 Tbsp. citrus juice
1 1/2 tsp. reduced-sodium soy sauce
1/4 tsp. salt
1/4 tsp. pepper
1/4 cup extra-virgin olive oil

1. In a small bowl, whisk together mustard, vinegar, honey, citrus zest and juice, soy sauce, salt, and pepper. While whisking, stream in olive oil until dressing is emulsified. Alternatively, combine all ingredients in a small Mason jar, then close tightly and shake until well blended.
